An effective way to deal with this extremely tough and lethal boar that farts poison gas while in New Game, where you still don't have many skills and upgrades, is to lure at least two mercenaries at its den, then hide in the grass and let them fight it (it's safer to pay the bounties once they are in the arena). The mercenaries will do all the dirty work for you, killing the boar. This video is from a New Game, Normal difficulty.
